Key Lime Pie with Sour Cream Topping

So…did you guess??  Were you right??  You had a little hint and hopefully you picked up on the title of the post yesterday that these guys are key limes.  And no they are not green when they are ripe, they are a beautiful shade of yellow….not bright like a lemon…..more like sunshine.  They are sweeter than either a lemon or a lime and tangy at the same time….perfect for baking with!

We get so many key limes from our tree, I  have to make pie, cookies, and anything else I can think of because you can only set aside so many key limes for a Corona.  So, we are making Key Lime Pie today. 
A couple of years ago, I decided to test out a whole bunch of Key Lime Pie recipes.  Our family and friends were pretty happy to have lots of pie…who doesn’t like pie?….and everyone seemed to have a different favorite.  Today, I am going to make Husband’s favorite.  He likes his extra tangy, so I add more lime juice.  This is a super easy recipe to make, so I hope you all try it!  I started with an Emeril Lagasse recipe and tweaked it to suit me.  Mr. R, keep your eyes out, your favorite is coming soon!!

Key Lime Pie With Sour Cream Topping

Adapted from Emeril Lagasse
Pie Ingredients
  • Graham Cracker Crumbs {or a pre-made graham cracker crust from the baking isle}
  • 1/2 cup sugar
  • 6 tablespoons butter
  • 2 cans sweetened condensed milk
  • 1 cup key lime juice
  • 2 whole eggs
Topping Ingredients
  • 1 cup sour cream
  • 3 tablespoons powdered sugar
  • 1 tablespoon lime zest

Directions
1.  Mix graham cracker crumbs, sugar, and butter together in a bowl.  If you prefer to buy a pre-made graham cracker crust from the market, they are available in the baking isle.

2.  Press into a 9” pie pan.

3.  Bake at 350 for 20 minutes and cool on a cooling rack.

4.  Whisk the eggs,

add the lime juice,

add the sweetened condensed milk,

and whisk it up.

5.  Pour into the pie shell and bake at 325 for 20 minutes.

6.  Cool and then chill for at least 2 hours.

7.  Mix together 1 cup sour cream, 3 tablespoons powdered sugar, and 1 tablespoon of lime zest.  I had help from Little One when she woke up from her nap….she loves whisking!

8.  Spread sour cream topping on top of the pie.  I made a little decorative swirl in the middle using one of my pastry bags, but it is easy to do by snipping the corner off a sandwich bag.

Yummy….as you can see, we’ve already cut into it…the girls have each had two pieces already.  I’ll be making another one soon….not as tart as this one and with whipped cream…..so stay tuned!   Try it out and let me know what you think.  Don’t forget, I’ll be featuring all sorts of fun stuff with pumpkins next week to fill a follower request!  Little One just asked for another piece….I’m off to dish out some more pie!
